Chicken and Pasta Salad with Creamy Chamomile Dressing

serves 4 to 6
prep and chill time 80 minutes

3 bags Celestial Seasonings Chamomile tea
1/4 cup white vinegar
3/4 mayo
11/2 tsp tarragon
1 lb pasta
2 Tbsp olive oil
4 boneless, skinless chicken breasts
1/2 c red peppers diced
1/2 c green peppers, diced

Steep the tea bags in the vinegar for 15 minutes. Squeeze the teabags before discarding. Mix in the mayo and tarragon and chill. Meanwhile, cook the pasta unitl al dente. Drain pasta and set aside. Heat the oil in a skillet and saute the chicken until cooked through. Remove to plate to cool. Shred chicken. Combine chicken, pasta, peppers and dressing. Chill.

Not my recipe.....I would have poached the chicken in the tea. Used lavendar instead of tarragon........skipped the pasta and went for brioche instead.....and how cheap is asparagus right now?
